Cabernet Sauvignon
100% Cabernet Sauvignon fruit from a south-facing block, direct pressed very slowly over 8 hrs. Juice settled fro a night then racked to an Austrian oak puncheon for fermentation and ageing on full lees for 15 months. This rosé was a one-off as we deemed the fruit not ripe enough in this cool vintage for a red wine, and instead made a very fresh and incisive Rosé with the lovely red fruit of Cab Sav, tight and taught with notes of cedar wood.
