Our first straight Cabernet Franc was picked as late as possible, then destemmed and macerated on skins in tank for 2 weeks. Given a daily punch down but without wanting to give it too much oxygen. Aged in old French oak for 14 months. Bramble dominates with a classic green, herbal, tomato leaf note. Complex and very Loire-like.
