    Sourced from the Chalmers vineyard in Northern Heathcote, on ancient cambrian clay. East facing, organic viticulture. 65% whole bunch, 3 weeks maceration with no pumping over or plunging. The wine was rested in old large format oak for 6 months, before being sulphured once, and bottled without fining or filtration.
