    Pinot Noir/Semillon

    Three quarters Pinot Noir one quarter Semillon. The Pinot Noir is off Andrew's organically run vineyard on the youngest volcanic soils in the country over heavy limestone. Andrew spray's his own fermented sea weed (sourced locally from our nearby beach) and worm castings via the lunar calendar. The Pinot is a blend of 50% carbonic macerated fruit and 50% rose of Pinot fermented and stored in stainless steel for 8 months. The Semillon is from a vineyard on the coast 100 kilometres north west of Mount Gambier this fruit was de-stemmed and left on skins for 10 days then stored in stainless steel where it developed a flor. Both wines were racked off lees after 8 months blended to sit and bottled without any additions of sulphites.
