    Old Riesling vines from the Schlossberg and younger vines from the Muschelkalk plot combine substance and freshness. After spontaneous alcoholic and malolactic fermentation, without filtration and sulphites, we rack into the magnum for the second fermentation. The bottles then sink into our rock cellar for 30 months. The disgorgement takes place "brut nature", without the addition of dosage liqueur or sulphites.
