    The Eddy Shiraz comes from a vineyard planted by Dave's family over 30 years ago in Hope Forrest, making it one of the southern most vineyards in the Adelaide hills. The vines sit at 390 metres above sea level and are planted on a SE aspect on gravelly silty loam over some clay before weathered pre Cambrian sandstone and quartzite. Eddy is the fruit above and below the ridge, deeper soils, bigger berries, a beautiful perfume and a brambly-ness but not the phenolic ripeness.Aiming to capture perfume and acid, it's a short time on skins (12 days), mostly kept in tank. Planted amongst the vineyard remains the odd semillon vine, which continues to add a wonderfull freshness to this wine. Bottled with minimal so2 and rested for over a year before release.
