Chardonnay
Chardonnay from the Magpie Springs Vineyard organically managed by Steve Thomas. Vineyard planted between 1992 – 1996, 340m ASL Silty clay loam, ironstone pebbles quartz over weathered quartzites. Direct pressed to tank for a cool wild fermentation and full malo. Once sugar and malo dry transferred to four seasoned French oak barriques where it was kept on fine lees for six months. Our first chardonnay straddles the edge of richness and minerality. Wet stone and gunsmoke combined with lemon curd and white peach.
